Steps

  1. 1
Heat the oven to 175°C and butter a 22 x 30 cm baking dish that will hold liquid — the cake is soaked and served in it.
  2. 2
Whisk the eggs with the sugar and vanilla on high speed for 8–10 minutes, until tripled in volume and thick enough to hold a ribbon.
  3. 3
Sift the flour and baking powder over in three additions and fold in gently with a spatula.
  4. 4
Spread in the dish and bake for 25–30 minutes, until golden and a skewer comes out clean. Leave to cool completely in the dish.
  5. 5
Whisk together the milk, condensed milk and the cream for the soak. Prick the sponge all over with a skewer and pour the mixture over in four or five additions, waiting for each to soak in — it looks like too much, but the sponge takes it all.
  6. 6
Cover and chill for at least 4 hours, preferably overnight.
  7. 7
For the caramel, melt the sugar in a dry pan over medium heat to an amber colour, take off the heat and whisk in the warmed cream for the caramel (it spits), then the butter. Simmer for 1 minute, stirring until smooth, and cool to room temperature.
  8. 8
Whip the cream for the topping with the icing sugar to soft peaks and spread it over the soaked sponge.
  9. 9
Pour the caramel over the cream and tilt the dish so it spreads thinly. Chill for 1 hour more, then cut into squares and serve from the dish with a spoonful of the milk from the bottom.
