A soft yeasted bread torn into pieces, each rolled in butter and sirene, baked so it pulls apart in cheesy layers.

  • 600 g plain flour
  • 250 ml milk, warm
  • 100 g plain yogurt
  • 7 g dry yeast
  • 1 tbsp sugar
  • 1 tsp salt
  • 120 g butter, melted
  • 250 g Bulgarian sirene, crumbled
  • 2 pieces eggs

    Dissolve the yeast and sugar in the warm milk and stand 10 minutes until foaming.

    Add the yogurt and one beaten egg, then work in the flour and salt to a soft dough. Knead 8 minutes until smooth.

    Cover and prove 1 hour until doubled.

    Knock back and divide into walnut-sized balls.

    Roll each ball first in melted butter, then in crumbled sirene, and pack them loosely into a greased round tin.

    Brush the top with the remaining egg beaten with a splash of milk.

    Bake at 180C for 35-40 minutes until deep golden. Serve warm so it tears apart.
