- 2 pieces garlic cloves
- 10 g fresh dill
- 2 tbsp extra virgin olive oil
- 1 tbsp fresh lemon juice
- 1 tsp salt

- 1Grate the cucumber on a coarse grater. Place in a clean cloth or sieve, sprinkle with a pinch of salt, and squeeze out as much moisture as possible.
- 2Mince the garlic very finely or grate it.
- 3Combine yoghurt, drained cucumber, garlic, olive oil, and lemon juice in a bowl.
- 4Fold in the chopped fresh dill. Season with salt and white pepper.
- 5Refrigerate for at least 30 minutes before serving to allow the flavours to meld.
