Steps

  1. 1
Scrub the beetroot, potatoes and carrots and cook them whole in their skins: the beetroot in its own pan for 50–60 minutes, the potatoes and carrots together for 20–25 minutes, until a knife slides in easily.
  2. 2
Leave everything to cool completely, then peel and cut into an even 1 cm dice.
  3. 3
Put the diced beetroot in a separate bowl and toss it with 1 tbsp of the oil. The film of oil stops it staining the whole salad crimson.
  4. 4
Squeeze the sauerkraut lightly and chop any long strands; dice the pickles to match the vegetables.
  5. 5
Combine the potatoes, carrots, sauerkraut, pickles, onion and peas, add the beetroot and the remaining oil, season with salt and fold together gently.
  6. 6
Chill for 30 minutes so the flavours settle, then scatter with the dill and serve.
