Steps

  1. 1
Put the veal in a snug pan with the carrot, celery, onion, bay leaves, wine, water and a good pinch of salt; the liquid should just cover the meat. Bring slowly to a simmer and skim.
  2. 2
Cover and poach very gently for 50–60 minutes, until a thermometer in the centre reads 62–65°C and the meat is just pink.
  3. 3
Leave the veal to cool completely in its liquid — this keeps it moist — then lift it out, wrap it and chill for at least 1 hour so it slices thinly.
  4. 4
Strain 100 ml of the poaching liquid. Blend the tuna, anchovies and 1 tbsp of the capers with enough of it to make a smooth purée.
  5. 5
Fold the purée into the mayonnaise with the lemon juice; the sauce should coat a spoon thickly. Taste for salt.
  6. 6
Slice the cold veal as thinly as you can across the grain and lay the slices overlapping on a platter.
  7. 7
Spread the sauce over the meat to cover it completely and scatter with the remaining capers. Cover and chill for a few hours, or overnight, so the flavours meld, and serve cold.
