- 1 kg watermelon, cubed
- 200 g feta, cubed
- 20 g fresh mint leaves
- 0.5 pieces red onion
- 2 tbsp lime juice
- 3 tbsp extra virgin olive oil
- 0.5 tsp black pepper
- 60 g black olives (optional)

- 1Chill the watermelon thoroughly before cutting — the temperature contrast with the feta is most of the pleasure.
- 2Cut it into 3 cm cubes, removing the seeds, and drain off any loose juice.
- 3Slice the onion paper-thin and soak it in cold water for 10 minutes, then dry it.
- 4Arrange the watermelon and feta on a wide platter rather than tossing them in a bowl, which breaks the feta down.
- 5Scatter over the onion, torn mint and olives if using.
- 6Dress with the lime juice and olive oil and grind over plenty of black pepper. Do not add salt — the feta has it covered.
- 7Serve immediately, while it is still cold.
