Cold watermelon against salty feta, mint and lime — the simplest hot-weather salad there is.

Ingredients

  • 1 kg watermelon, cubed
  • 200 g feta, cubed
  • 20 g fresh mint leaves
  • 0.5 pieces red onion
  • 2 tbsp lime juice
  • 3 tbsp extra virgin olive oil
  • 0.5 tsp black pepper
  • 60 g black olives (optional)

    Chill the watermelon thoroughly before cutting — the temperature contrast with the feta is most of the pleasure.

    Cut it into 3 cm cubes, removing the seeds, and drain off any loose juice.

    Slice the onion paper-thin and soak it in cold water for 10 minutes, then dry it.

    Arrange the watermelon and feta on a wide platter rather than tossing them in a bowl, which breaks the feta down.

    Scatter over the onion, torn mint and olives if using.

    Dress with the lime juice and olive oil and grind over plenty of black pepper. Do not add salt — the feta has it covered.

    Serve immediately, while it is still cold.
