Steps
Steps
- 1Mix the Worcestershire sauce, oyster sauce, ketchup, soy sauce and sugar.
- 2Loosen the noodles: rinse a block of fresh noodles briefly under hot water and pull them apart, or cook ramen noodles for 1 minute less than the packet says and drain them well.
- 3Heat 1 tbsp of the oil in a wok or large frying pan over high heat and fry the pork for 3 minutes until browned and crisp at the edges, seasoning it with the salt and white pepper.
- 4Add the onion and carrot for 1 minute, then the cabbage for 2 minutes, until it wilts but still has some crunch.
- 5Push everything to one side, add the remaining oil and the noodles and fry for 2 minutes, stirring only a little so they brown in places.
- 6Toss everything together with the beansprouts, pour over the sauce and toss for 1–2 minutes until the noodles are evenly coated and darkened.
- 7Serve topped with the pickled ginger, aonori and spring onions.
