Steps
Steps
- 1Soak 12 bamboo skewers in water for 30 minutes so they do not burn.
- 2For the glaze, simmer the soy sauce, mirin, sake and sugar in a small pan over medium heat for 10–12 minutes until reduced by about a third and syrupy. It thickens further as it cools.
- 3Thread the chicken onto the skewers, alternating with the spring onion and packing the pieces snugly so they cook evenly and stay juicy.
- 4Brush the skewers with the oil and season them lightly with the salt.
- 5Grill over very hot charcoal, or under a hot oven grill 8–10 cm from the heat, for 4 minutes per side until nearly cooked.
- 6Brush with the glaze, grill for 1 minute, turn, brush and grill for 1 minute more. Repeat twice until the glaze is lacquered and charred at the edges.
- 7Sprinkle with the seven-spice and serve hot, with the rest of the glaze for dipping.
