Steps
Steps
- 1Taste the sauerkraut: if it is very salty or sour, rinse it in a colander and squeeze it dry. Chop it finely.
- 2Heat the oven to 200°C/400°F.
- 3In a wide pan, fry the onion in the oil over medium heat for 5 minutes, then add the sauerkraut and cook, stirring, for 10–15 minutes until it softens and the liquid evaporates.
- 4Add the rice and stir for 2 minutes so the grains are coated in oil, then take off the heat and stir in the paprika, pepper and chilli flakes.
- 5Spread the mixture in a baking dish and pour over the hot water — it should just cover the cabbage.
- 6Bake for 40–45 minutes, until the rice has absorbed the water and the top has browned and crisped at the edges. Stir once halfway, then leave the top to brown.
- 7Rest for 10 minutes before serving. Taste before adding any salt — the sauerkraut usually brings enough.
