An everyday Bulgarian vegetable soup — potato, carrot, celery, peppers and tomato simmered in a paprika-tinged broth and sharpened at the end with lemon juice instead of the usual egg-and-yoghurt liaison, which keeps it vegan.

Steps

  1. 1
Heat the oil in a large pot over medium heat and fry the onion, carrots and celery for 7–8 minutes until the onion is soft.
  2. 2
Add the peppers and cook for 3 minutes more, stirring.
  3. 3
Take the pot off the heat, stir in the paprika for a few seconds, then add the tomatoes and return to the heat for 3 minutes.
  4. 4
Pour in the hot water or stock, add the potatoes, salt and pepper, and bring to the boil.
  5. 5
Lower the heat and simmer, half-covered, for 25 minutes until the potatoes and carrots are tender.
  6. 6
Take off the heat, wait until the soup stops bubbling, then stir in the lemon juice a little at a time, tasting — the soup should taste bright but not sour. Lemon added off the boil keeps its fresh flavour.
  7. 7
Stir in the parsley, cover and rest for 5 minutes before serving.
