Steps
Steps
- 1Heat the olive oil in a large, wide pot over medium heat and cook the onion and fennel for 10 minutes until soft.
- 2Add the garlic and chilli flakes for 1 minute, then the tomato paste for 2 minutes until it darkens.
- 3Pour in the wine and boil for 3 minutes to cook off the alcohol.
- 4Add the tomatoes, stock, bay leaf and oregano and simmer 25 minutes; season with salt and pepper. The base can be made a day ahead up to this point.
- 5Add the clams, cover and cook 3 minutes.
- 6Add the mussels and the fish, cover and cook 3 minutes more.
- 7Add the prawns, cover and cook 2 minutes, until the shells have opened and the prawns are pink — adding the seafood in order of cooking time is what keeps each one tender. Discard any shells that stay closed.
- 8Stir in the parsley and serve straight from the pot with the toasted sourdough.
