Steps
Steps
- 1Boil the potatoes in salted water for 15–20 minutes until soft. Drain and mash with 40 g of the butter and 100 ml of the milk, season and beat in half the cheddar.
- 2Meanwhile, put all the fish in a wide pan with the remaining 600 ml milk, the bay leaves and the onion. Bring to a bare simmer and poach for 5 minutes, then lift out the fish and strain and keep the milk.
- 3Boil the eggs for 9 minutes, cool them in cold water, peel and quarter them.
- 4Melt the remaining butter in a saucepan, stir in the flour for 1 minute, then gradually whisk in the poaching milk and simmer for 5 minutes until thick. Stir in the parsley and lemon juice and season, tasting first, since the smoked fish is salty.
- 5Heat the oven to 200°C. Flake the fish into large chunks in a 2-litre baking dish, discarding any skin and bones, scatter over the raw prawns and egg quarters and pour the sauce over.
- 6Spoon the mash on top, spread it to the edges, rough it up with a fork and sprinkle with the rest of the cheddar.
- 7Bake for 30–35 minutes, until golden and bubbling at the edges; the prawns cook in the oven. Rest for 10 minutes before serving.
