Steps
Steps
- 1Halve the tomatoes and grate the cut sides on a coarse grater into a bowl until only the skin is left in your hand; discard the skins. Heat the grill to high.
- 2Heat the olive oil in a wide ovenproof frying pan over medium heat and cook the spring onions for 2 minutes, then add the garlic and chilli flakes for 30 seconds without letting the garlic colour.
- 3Add the grated tomatoes, oregano, salt and pepper and simmer for 8–10 minutes, until thick enough that a spoon drawn through leaves a trail.
- 4Turn up the heat, add the prawns and pour in the ouzo; let it bubble for 30 seconds to cook off the alcohol.
- 5Cook the prawns in the sauce for 2–3 minutes, turning them once, until just pink and curled — no longer, or they turn rubbery.
- 6Scatter over the feta and slide the pan under the hot grill for 2–3 minutes, until the cheese softens and colours at the edges.
- 7Sprinkle with the parsley and serve straight from the pan, with crusty bread for the sauce.
