Korean fermented chilli paste thinned with vinegar, sesame and honey into a glaze for anything grilled.

  • 5 tbsp gochujang
  • 2 tbsp rice vinegar
  • 1 tbsp toasted sesame oil
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 2 pieces garlic cloves, grated
  • 10 g ginger, grated
  • 1 tbsp toasted sesame seeds
  • 3 tbsp water

    Whisk the gochujang with the water first, until completely smooth. Adding the other liquids to a stiff paste leaves lumps you cannot whisk out later.

    Whisk in the rice vinegar and soy sauce.

    Add the honey, grated garlic and ginger.

    Finish with the sesame oil, which should go in last so its aroma is not cooked or diluted away.

    Taste and balance: it should be hot, sweet and sour in roughly equal measure.

    Stir in the sesame seeds. Keeps two weeks in the fridge; use as a glaze in the last minutes of grilling, since the honey burns.
