- 2 tbsp rice vinegar
- 1 tbsp toasted sesame oil
- 2 tbsp honey
- 1 tbsp soy sauce
- 2 pieces garlic cloves, grated
- 10 g ginger, grated
- 1 tbsp toasted sesame seeds
- 3 tbsp water

- 1Whisk the gochujang with the water first, until completely smooth. Adding the other liquids to a stiff paste leaves lumps you cannot whisk out later.
- 2Whisk in the rice vinegar and soy sauce.
- 3Add the honey, grated garlic and ginger.
- 4Finish with the sesame oil, which should go in last so its aroma is not cooked or diluted away.
- 5Taste and balance: it should be hot, sweet and sour in roughly equal measure.
- 6Stir in the sesame seeds. Keeps two weeks in the fridge; use as a glaze in the last minutes of grilling, since the honey burns.
