Steps

  1. 1
Season the chicken with half the Cajun seasoning. Heat the oil in a large, heavy casserole over medium-high heat and brown the sausage for 4 minutes, then lift it out. Brown the chicken in the same fat for 5 minutes and lift it out too.
  2. 2
Add the onion, green pepper and celery to the pot and cook for 8 minutes, scraping up the browned bits, until soft. Stir in the garlic, the rest of the Cajun seasoning, the paprika and thyme and cook for 1 minute.
  3. 3
Add the tomatoes, stock and bay leaves, return the chicken and sausage, season with salt and bring to the boil.
  4. 4
Rinse the rice, stir it in once, cover tightly and cook over low heat for 20 minutes without lifting the lid or stirring. Stirring releases starch and turns the rice gluey.
  5. 5
Lay the prawns on top, cover again and cook for 5 minutes more, until they turn pink.
  6. 6
Turn off the heat and leave the pot covered for 10 minutes so the rice finishes in the steam.
  7. 7
Remove the bay leaves, fork the rice through gently, scatter with the spring onions and serve.
