Steps

  1. 1
Toss the beef with 1 tbsp of the soy sauce, 1 tsp of the sugar, 1 tsp of the sesame oil and 1 garlic clove, and leave for 15 minutes.
  2. 2
Cook the noodles in boiling water for 6–7 minutes until chewy and translucent, drain, rinse briefly under cold water and snip through them a few times with scissors. Toss with 1 tbsp of the sesame oil.
  3. 3
Blanch the spinach for 30 seconds, cool it under cold water, squeeze it dry and season with a pinch of the salt and 1 tsp of the sesame oil.
  4. 4
Beat the eggs with a pinch of the salt and fry them into a thin omelette in a little of the sunflower oil, then roll it up and slice it into thin strips.
  5. 5
In a wok over high heat, with a little sunflower oil each time and a pinch of salt, stir-fry separately the onion for 2 minutes, the carrot for 1 minute, the pepper for 1 minute and the mushrooms for 2 minutes. Cooking them apart keeps the colours bright and the textures distinct. Then stir-fry the beef for 2 minutes until browned.
  6. 6
Mix the remaining soy sauce, sugar, sesame oil and garlic. Toss the noodles with this sauce in the wok over medium heat for 2 minutes until they absorb it, then add all the vegetables, the beef and the spring onions and toss well.
  7. 7
Serve topped with the egg strips and sesame seeds, warm or at room temperature.
