Steps
Steps
- 1Heat the sesame oil in a shallow pot over medium-high heat and fry the pork belly for 4 minutes, until it renders some fat.
- 2Add the kimchi, onion and garlic and stir-fry for 5 minutes — frying the kimchi first deepens its flavour.
- 3Stir in the gochugaru, gochujang and sugar for 1 minute.
- 4Pour in the water and the kimchi juice, bring to the boil and simmer 15 minutes.
- 5Lay the tofu slices on top and simmer 5 minutes more, spooning the broth over them.
- 6Taste — it should be sour, spicy and savoury at once — and scatter with the spring onions.
- 7Serve bubbling from the pot, with the rice alongside.
