Steps
Steps
- 1Blend the shallots, garlic, ginger, lemongrass, chillies, shrimp paste, turmeric and ground coriander with 2 tbsp of the oil to a smooth paste.
- 2Heat the remaining oil in a pot over medium heat and fry the paste, stirring, for 8–10 minutes, until it darkens, smells sweet and the oil separates — undercooked paste tastes raw and harsh.
- 3Add the stock, bring to the boil and simmer 10 minutes.
- 4Stir in the coconut milk and sugar, season with salt and simmer gently for 5 minutes without letting it boil hard.
- 5Add the tofu puffs and prawns and cook 2–3 minutes, until the prawns are pink.
- 6Meanwhile cook the rice vermicelli according to the packet, drain and divide between deep bowls with the bean sprouts.
- 7Ladle the hot broth, prawns and tofu puffs over the noodles.
- 8Top each bowl with the egg halves and coriander leaves and serve with the lime wedges.
