Steps
Steps
- 1Peel the mangoes and cut the flesh off the stone into thin matchsticks, or shred it on the coarse side of a grater. The mango should be firm and tart: a soft, ripe one turns to mush.
- 2Dissolve the sugar in the lime juice and fish sauce, then taste: it should be sour first, then salty, then sweet.
- 3Toss the mango, shallots, chilli, coriander and mint with the dressing.
- 4Pile onto a plate, scatter with the peanuts and serve at once, before the mango releases its juice.
