Steps
Steps
- 1Rinse the rice until the water runs clear, then soak it in cold water for at least 4 hours or overnight.
- 2Drain the rice, spread it in a steamer lined with muslin or perforated baking paper, and steam over boiling water for 20–25 minutes until translucent and tender.
- 3Meanwhile warm 300 ml of the coconut milk with 70 g of the sugar and 3/4 tsp of the salt, stirring until dissolved; do not let it boil.
- 4Tip the hot rice into a bowl, pour over the warm coconut milk, stir gently, cover and leave for 20 minutes to soak it up. Hot rice and warm milk are the key, because cold rice will not absorb it; the result should be glossy and sticky, not wet.
- 5For the topping, heat the remaining coconut milk with the rest of the sugar and salt, stir in the cornflour mixed with the water and simmer for 1 minute until thickened.
- 6Peel the mangoes and slice the flesh off the stone. Serve the rice at room temperature with the mango, a spoonful of the topping and a sprinkle of sesame seeds.
