Steps
Steps
- 1Spoon 6 tbsp of the thick cream from the top of the coconut milk into a heavy pot with the oil and fry over medium heat, stirring, for 5 minutes until the fat separates and glistens.
- 2Add the curry paste and fry for 3 minutes, stirring, until deeply fragrant. Frying the paste in split coconut cream is what gives a Thai curry its aroma.
- 3Add the beef, turn it to coat and fry for 3 minutes.
- 4Pour in the rest of the coconut milk and the water, add the cinnamon, cardamom and bay leaves, and simmer gently, partly covered, for 1 hour 30 minutes until the beef is nearly tender.
- 5Add the potatoes, onion and peanuts and simmer for 25–30 minutes more, until the potatoes are cooked and the beef is very tender.
- 6Season with the tamarind, fish sauce and palm sugar, tasting as you go: sweet, salty and sour should balance over a gentle warmth.
- 7Pick out the cinnamon and bay leaves and serve with the rice.
