Steps
Steps
- 1Pound the shallots, garlic, chillies and shrimp paste into a rough paste in a mortar, or blitz them in a mini chopper.
- 2Heat 2 tbsp of the oil in a wok over medium-high heat and fry the paste for 2 minutes, stirring, until fragrant and the raw smell of the shrimp paste has gone.
- 3Add the chicken and stir-fry for 3 minutes, then the prawns for 2 minutes until pink.
- 4Turn the heat to high, add the rice, breaking up any clumps, and toss for 3 minutes until hot through and lightly toasted. Day-old rice is drier, so it fries instead of steaming.
- 5Add the sweet soy sauce, light soy sauce and white pepper and toss until every grain is evenly coloured, then stir in the spring onions.
- 6Fry the eggs in the remaining oil in a frying pan until the edges are crisp and the yolks still runny.
- 7Serve each plate topped with a fried egg, with the cucumber, tomato, prawn crackers and fried shallots on the side.
