Steps
Steps
- 1Soak the noodles in hot water for 10–15 minutes until pliable but still firm, drain them well and toss with 1 tsp of the dark soy sauce so the strands do not stick together.
- 2Mix the light soy sauce, the rest of the dark soy sauce, the oyster sauce and sugar.
- 3Heat 1 tbsp of the oil in a wok until smoking, stir-fry the chicken for 2–3 minutes until cooked, and lift it out.
- 4Add 1 tbsp of the oil with the garlic and the broccoli stems and stir-fry for 1 minute, then add the leafy tops for 30 seconds.
- 5Push everything to one side, add the last of the oil and the noodles, spread them out and leave them for 30–45 seconds to char in spots before tossing. Add half the sauce.
- 6Push the noodles aside, crack in the eggs and scramble them briefly until half set, then fold them through the noodles.
- 7Return the chicken, add the remaining sauce and the white pepper, and toss until the noodles are evenly dark and glossy. Serve at once.
