Steps

  1. 1
Spoon 6 tbsp of the thick cream from the top of the coconut milk into a wok and simmer over medium heat, stirring, for 4–5 minutes until it splits and the oil appears.
  2. 2
Add the curry paste and peanuts and fry for 2–3 minutes, stirring constantly, until the paste darkens and smells toasty.
  3. 3
Add the chicken, stir to coat it in the paste and cook for 2 minutes.
  4. 4
Pour in the rest of the coconut milk, tear in 4 of the lime leaves, add the fish sauce and sugar, and simmer for 8–10 minutes until the chicken is cooked and the sauce coats it thickly. Panang should be much thicker than a green or red curry.
  5. 5
Taste and adjust: salty and sweet first, then heat.
  6. 6
Shred the remaining lime leaves as finely as you can, scatter them over the curry with the chilli and basil, and serve with the rice.
