Steps
Steps
- 1Bring the water and milk to a simmer with 1 tsp salt in a heavy saucepan, then whisk in the grits in a thin stream so no lumps form.
- 2Cook over the lowest heat for 30–40 minutes, stirring every few minutes and scraping the bottom, until thick, creamy and tender. Add a splash of hot water if they get too stiff.
- 3Meanwhile, fry the bacon in a large frying pan over medium heat for 6–8 minutes until crisp. Lift it out and leave the fat in the pan.
- 4Pat the prawns dry and toss them with the cayenne, paprika, a pinch of salt and some pepper.
- 5Take the grits off the heat, stir in the butter and cheddar, season and cover to keep warm.
- 6Turn the frying pan to high, add the prawns in one layer and cook for 1–2 minutes a side, until just pink and curled into a C; add the garlic for the last 30 seconds. A prawn curled into a tight O is overcooked.
- 7Take the pan off the heat and toss in the lemon juice, the bacon and most of the spring onions.
- 8Spoon the grits into warm bowls, top with the prawns and pan juices and sprinkle with the parsley and the rest of the spring onions.
