Steps

  1. 1
Bring a large pan of salted water to the boil and put the spaghetti in as you start the sauce, cooking it for 2 minutes less than the packet time. Reserve a cupful of the water before draining.
  2. 2
Heat 4 tbsp of the oil in a very large frying pan over medium heat with the garlic and chilli until the garlic is pale gold.
  3. 3
Raise the heat, add the squid and prawns and cook for 2 minutes, until the prawns turn pink. Lift them out.
  4. 4
Add the mussels, clams and wine, cover and cook for 3–4 minutes until the shells open; discard any that stay shut.
  5. 5
Add the tomatoes and cook for 2 minutes, crushing a few to release their juice.
  6. 6
Add the drained spaghetti, the squid and prawns and half the parsley with a splash of pasta water and toss hard for 1–2 minutes, until the pasta has drunk up the juices and looks glossy.
  7. 7
Finish with the remaining oil and parsley and serve at once.
