Steps
Steps
- 1Blitz the chillies and garlic to a coarse paste, with flecks still clearly visible — not a smooth purée. For a milder sauce, deseed half the chillies.
- 2Put the vinegar, water, sugar and salt in a saucepan and bring to the boil, stirring until the sugar dissolves.
- 3Add the chilli paste and simmer over medium-low heat for 5 minutes, until the chillies soften and the liquid turns slightly syrupy.
- 4Stir the cornflour mixture, pour it in in a thin stream while stirring and cook for 1–2 minutes more until the sauce turns clear and glossy. Do not over-thicken: while hot it should still run off the spoon, as it sets a lot as it cools.
- 5Leave to cool completely — once thickened, the sauce keeps the flecks evenly suspended.
- 6Pour into a sterilised bottle or jar and keep in the fridge for up to a month. Serve with spring rolls, fried tofu or chicken.
